I'm at the first encounter, you know, when Elle and her car are knocked into a wall, and you have to fight Schisy one on one.
I have half health, no drinks, no shotty ammo.
Is there something I'm missing (strategy-wise) here?

yeah my hubby beat siam wwith the pipe or knife, (he says pipe, i swear it was the knife) he dodged and got to to his backside where the woman is and just wailed on her, like someone mentioned before. he too was out of supplies.

timing is so important, since hes a little slow once you get around to the backside, you're good. GOOD LUCK

As others have said:
With ammo just unload on it and it will die in 3-6 shots depending on the gun.
Without ammo just dodge like a madman and attack the female half of Siam. I have tried to melee the front and I have yet to be able to kill it in that fashion by the way, so I wouldn't advise rushing it.

Take your knife out, and keep a good distance back, dodging when necessary. Eventually it'll do this sweeping attack that reveals it's backside. Dodge it, then wail on the female legs like a madman.

In the garage, before you duck under the shutter to fight Siam, did you get the health drink, shotgun and handgun ammo in the locked steel cabinet right of the lever?
I'm sure that will help.
